Why do people watch daily soaps?

They do same things everyday, there is no career. Which means they have a lot of time (in the long term). So they want to watch something which is slow paced so they can keep up easily, something which doesn't end for a long time. These shows have woman protagonist to which they can relate to.

Why its called daily soaps?

A soap opera, daytime drama, or soap for short, is typically a long-running radio or television serial, frequently characterized by melodrama, ensemble casts, and sentimentality. The term "soap opera" originated from radio dramas originally being sponsored by soap manufacturers.

Genres of soap opera:

Romance, secret relationships, extramarital affairs, and genuine hate have been the basis for many soap opera storylines. In US daytime serials, the most popular soap opera characters, and the most popular storylines, often involved a romance of the sort presented in paperback romance novels.
